"The Egg: Cracking Myths from the Chicken to the Fork"

At a time when what we eat is increasingly scrutinized, there is a need to clarify one of the most complete and nutritious foods there is, the egg! The egg, the chickens that lay them, and the egg production industry are topics of undeniable interest, but still little publicized. Myths and misinformation about the quality and production of this food are abundant. However, if we analyze the doubts in the light of science, we can clarify many of these myths that revolve around eggs and chickens.

In Portugal, the four breeds of indigenous chickens, Pedrês Portuguesa, Preta Lusitanica, Yellow and White, are on the verge of extinction, meaning their conservation is urgent. Commercial poultry production for meat and eggs exclusively uses hybrid strains selected for maximum productivity. However, Portuguese chicken breeds, despite being naturally less productive, are more robust, less prone to disease, and are better adapted to local environmental and territorial conditions. The aim is to empower the general public to raise these unique breeds of chickens, which are important for preserving biodiversity, maintaining cultural heritage and promoting sustainable agriculture.
